Spaghetti with Rocket, Olives and Ricotta Spaghetti with Rocket, Olives and Ricotta


300g dried spaghetti
2 teaspoons olive oil
1 small onion, finely chopped
1 bunch of rocket, finely chopped
1 garlic clove, finely chopped
12 pitted green olives, finely chopped
75g ricotta cheese
125ml dry white wine
salt and pepper

  1. Plunge the spaghetti into a large saucepan of salted boiling water and simmer for 10 -12 minutes or until al dente
  2. Meanwhile heat the oil, then add the onion and cook gently, stirring for 5 minutes until softened
  3. Add the rocket, olives, garlic and salt and pepper to taste and stir for 2 – 3 minutes until the rocket is wilted. Add the ricotta and wine and stir until the ricotta has melted and is mixed evenly with the rocket and olives
  4. Drain the spaghetti, return to the pan and add rocket mixture. Toss well to combine

Preparation time: 10 minutes

Cooking time: 12 minutes
